It's not a technical discussion about dynamic range and sensors, but a shooting technique, it has nothing to do with sensors .
I use this technique quite often, exposing is not easy, live view and EVF are of a big asset, yet shooting RAW and being able to adjust exposure after shooting  is what I always do, bracketing in portraiture is not usually a great idea, but it is doable.
As for flash use, in the past it was a must for me, now less and less.
If you have the luxury of being able to do test shots or better having your camera connected to a PC to actually see instantly the results and adjust accordingly that would be ideal especially for the balance ambient light/flash light, that is very hard to adjust in post processing once the shot has been taken
