Have you ever looked at Ansel Adams' work. It's called dodging & burning to expose the subject and NOT blow out the sky. It is and has always been a standard and accepted tool since negatives were used to transfer an image to photo paper. HDR is just the new word/process for dodging & burning via a computer. I did the same when I was developing (as a hobbyist) my own B&W film and making prints in the 80's.
I think a bigger issue is with photo shop. It CAN make a person lazy in so far as working to get the best shot. They just shoot whatever and then fix it up. Power lines, Cars, bad exposure, People you don't want in the shot. Gone. Don't like the models red shirt. That's ok just change it to yellow. Now that is internet photography. But it's all good. If one is happy with their work and others enjoy the images. That's what matters.
