I/O stands for Input Output. I was specifically commenting on disk/storage input/output (how long it takes to read (load) and write (save) your image to storage).

I would avoid a tablet for this application. Also an I5 is probably fast enough and a bit less expensive than an I7. I'm in USA so it is difficult for me to comment on prices. I did a quick 'google' search and here are some models that you might consider (note that I do not have 1st hand experience with any of these so I would seek additional comments or perhaps check them out in the store if they are in your price range):
asus n56vm-ab71 (15 inch 1080p) (amazon uk list this as around 900 euros)
macbook air (13 inch)

I checked amazon and the reviews for the asus n56 series seems quite positive (I had a few hp models listed but removed them due to very poor reviews).

Mind you I would not run out and buy the n56vm; but I think it is worth checking out in greater details.
